Annabel Langein's 'Shellfish Fritters with Zucchini and Basil' recipe can be made with either fresh mussels, clams, tuatua or pipis. Adding zucchini, spring onion, pesto or finely chopped basil along with zest of 1 lemon, these fritters can be put together in 20 minutes! Serve with lemon wedges and buttered fresh, sliced white bread.
